Drop Biscuits

This is Pioneer Woman's recipe!!

  • Biscuits
  • 3 cups All-purpose Flour
  • 2 Tablespoons Baking Powder
  • 1/2 teaspoon Salt
  • 1-1/2 stick (3/4 Cup) Cold Butter, Cut Into Pieces
  • 1-1/4 cup Buttermilk
Preheat oven to 400 degrees.

Add flour, baking powder, and salt to the bowl of a food processor (or a large bowl.) Add butter pieces and pulse until butter is completely cut into the flour mixture (or use a pastry cutter if using a bowl.) While pulsing (or stirring) drizzle in the buttermilk until dough just comes together and is no longer crumbly.

Drop in clumps on two baking sheets, then bake for 15-17 minutes, or until golden brown. (Optional: Brush with melted butter when biscuits first come out of the oven.)

Fried Rice

Fried Rice in  Instant Pot
Ingredients
  • 2 tbsp butter 
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 eggs
  • 2 C rice(uncooked)
  • 1/2 C soy sauce
  • 3 C chicken stock
  • 2 C frozen stir fry veggies (rinsed and set out to thaw while rice is cooking)
Instructions
  1. Heat the pressure cooker on the saute setting.
  2. Place the butter in the pot. Add the onion and garlic. Saute 1 minute.
  3. Add the eggs and scramble with the rest of the ingredients for 1-2 minutes.
  4. Add the rice, soy sauce and chicken stock and stir well.
  5. Place the lid on the unit and set the steam valve to closed.
  6. Press the rice option.
  7. When the unit is done cooking, carefully release the steam valve.
  8. Remove the lid and stir in frozen veggies.
